Both pumpkin and applesauce are used in some baking recipes to replace eggs or oils. I have no experience using either to replace oil, but I have used both canned pumpkin and applesauce to replace eggs, with good results. Depending on what eggs are in the recipe to do, it may or may not work - if you are making an omelet, you can't just throw some applesauce in instead. Where the eggs are to be used as a binder or moistener, however, using either applesauce or canned pumpkin should have good results.
